Our Olio Nuovo is freshly harvested in Sonoma County, California, at Goldridge Organic Farms. This organic Tuscan-style blend is crafted primarily from Frantoio and Leccino olives, with a small percentage of Maurino and Pendolino for balance and complexity.
The olives are carefully hand-picked and pressed within hours of harvest at the estate’s on-site mill, preserving their freshness and vitality. The result is a vibrant golden-green oil with a medium body finish—naturally high in polyphenols and antioxidants.
Olio Nuovo has naturally occurring sediment that settles after crushing and bottling.
